Lookout Mountain Smoked Brisket
A whole packer brisket rubbed with butcher seasoning and smoked low and slow. Tender, smoky, and worth the wait.
Ingredients
- 1 whole beef brisket (10-12 lbs)
- 1/2 cup Lookout Mountain Butcher Rub
- 2 tbsp yellow mustard (as a binder)
Instructions
- Trim the brisket, leaving about a 1/4 inch fat cap.
- Coat all over with yellow mustard, then apply Lookout Mountain Butcher Rub generously on every side.
- Rest at room temperature 45 minutes while the smoker comes up to 225F.
- Smoke fat-side up until the internal temperature reaches 165F, about 6 hours.
- Wrap in butcher paper and continue until 203F, about 4 more hours.
- Rest wrapped at least 1 hour, then slice against the grain.
