Mild Red Chile Smothered Enchiladas
Corn tortillas smothered in homemade red chile sauce and filled with chicken and cheese. Classic New Mexican comfort food.
Ingredients
- 4 tbsp mild red New Mexican chile powder
- 2 cups chicken broth
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp oregano
- 8 corn tortillas
- 2 cups shredded cooked chicken
- 1 cup Monterey Jack cheese, shredded
Instructions
- Make the sauce: saute garlic, whisk in chile powder, cumin, and oregano, then pour in broth. Simmer 10 minutes.
- Dip each tortilla briefly in warm sauce to soften.
- Fill with shredded chicken and a sprinkle of cheese. Roll and place seam-side down in a baking dish.
- Pour remaining sauce over enchiladas. Top with remaining cheese.
- Bake at 375F for 20 minutes until bubbling. Serve with sour cream and sliced green onions.
