New Mexican Green Chile Pork Stew
A New Mexican green chile pork stew simmered until the pork is meltingly tender. Warming, spicy, and even better the next day.
Ingredients
- 2 lbs pork shoulder, cubed
- 3 tbsp hatch green chile powder
- 1 onion, diced
- 4 garlic cloves, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tsp cumin
- Salt and olive oil
Instructions
- Season pork with salt. Brown in batches in olive oil.
- Saute onion and garlic in the same pot. Add green chile powder and cumin. Stir 1 minute.
- Add tomatoes and broth. Return pork.
- Bring to a boil, cover, and simmer 1.5 hours until pork is tender.
- Adjust seasoning and serve over white rice with warm flour tortillas.
