New Mexican Red Chile Sauce
An authentic New Mexican red chile sauce with earthy depth. The backbone for enchiladas, smothered burritos, and posole.
Ingredients
- 4 tbsp hot red New Mexican chile powder
- 2 cups beef or chicken broth
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp Mexican oregano
- Salt to taste
Instructions
- Heat olive oil in a saucepan over medium heat. Saute garlic 1 minute.
- Add chile powder, cumin, and oregano. Stir 1 minute until fragrant.
- Pour in broth gradually, whisking well to eliminate lumps.
- Bring to a simmer and cook 15 minutes until sauce thickens slightly.
- Adjust salt. Use over tamales, enchiladas, or as a braising sauce for pork.
