Ingredients

  • 8 oz rice noodles, soaked per package
  • 2 tbsp Liquid Tamarind mixed with 2 tbsp warm water
  • 3 tbsp fish sauce
  • 2 tbsp sugar
  • 2 tbsp vegetable oil
  • 2 eggs
  • 1 cup bean sprouts
  • 2 green onions, sliced
  • 1/4 cup roasted peanuts, crushed
  • Lime wedges and dried chili to serve

Instructions

  1. Whisk together tamarind water, fish sauce, and sugar into a sauce.
  2. Stir-fry noodles in hot oil 2 minutes. Push to the side and scramble eggs.
  3. Add sauce and toss everything together.
  4. Add bean sprouts and green onions. Toss until just wilted.
  5. Plate and top with crushed peanuts. Serve with lime wedges.
  6. Add shrimp, chicken, or extra tofu to make it a heartier meal.
